Sourced an excellent batch of fruit from our grower at Faraday in the southern end of the Bendigo region. The vineyard altitude of 500 metres provides ideal cool climate growing conditions for the Pinot Gris vines to perform at their best. Cold soaked for 24 hours from arrival and pressed to tank for cool ferment over a 6 week period. Held on lees with occasional stirring to promote texture and mouthfeel. 6 months after fermentation the wine was bottled without fining and after a light filtration.
